Besides looking for our symbol to know you are choosing top quality Canada Beef, there are other things to watch for too. You might notice that meat is given a “grade” assigned to it, this is another feature to look for on the label when you are buying meat. Most packages will be labeled Prime, AAA, AA, or A. Prime is the highest grade and mostly found in high end restaurants. After that AAA is the highest and will usually have a good amount of marbling and good flavor. Grade AA will have slight marbling and should be slightly more affordable. Grade A will usually only have very minimal marbling.
Some meat displays at grocers can be overwhelming especially if you are not sure what you are looking for. Most stores organize their meat department by cooking category. You will notice that the name of the steak will usually include the cooking method. For instance, Strip Loin Grilling Steak, tells you that this particular cut is best for grilling. Beef choices are organized the following way usually:
- Steaks: grilling, marinating or simmering
- Roasts: oven, rotisserie, or pot roasts
- Quick cook beef: Stir fry strips, kabobs, or fast fry/minute/tenderized steaks
- Stew Beef
- Ground Beef
Once you decide on what kind of meal you are making, knowing these categories above helps you locate exactly the right type of meat you need for that specific meal.
